Kaiten is proud to introduce Melbourne’s first high-standard Japanese sushi train, offering a unique and authentic dining experience that celebrates the true spirit of Japan, backed by over 25 years of experience in sushi retail.

We source the freshest seafood daily from the Melbourne Fish Market, handpicked by our founders with over 30 years in the seafood industry. We also airfreight premium fish directly from Japan every week, giving our customers access to exceptional quality at a reasonable price. Every key ingredient – from our rice and vinegar to soy sauce and nori – is personally selected from traditional farmers and food artisans in Japan, ensuring our sushi reflects authentic Japanese flavours.

Our interiors, crafted with handmade traditional materials, are designed to transport guests into Japan the moment they enter. At Kaiten, we don’t just serve sushi – we bring the heart of Japan to Melbourne.
